It tells you whether the instrument had drifted since last time. If as-found and as-left are identical on every point and no note explains it, either nothing was adjusted or nothing was really measured.
The certificate should name the master used and its own certificate number and validity. An unbroken chain to a national standard is what "traceable" means. Without the chain, the word is decoration.
Every measurement has one. It should be stated with a coverage factor, usually k=2. If the uncertainty is a large fraction of your tolerance, the calibration cannot prove compliance.
Temperature and humidity at the time of calibration are recorded because they affect the result. A calibration done at 40 °C in a hot workshop is not the same as one done at 23 °C.
Calibrating only at zero and full scale hides non-linearity in the middle. Five points up and five down is the usual expectation for a process instrument.
